Cheese and Olive Stuffed Meatballs

This recipe is from one of our Foodies, Brenda Searle.

Ingredients & Directions:

9 large premium Seville-style olives, such as Penna Italian Style Pitted Olives*
2 oz Italian melting cheese, such as provolone
Dice cheese, stuff into olives
1 lb sweet or hot Italian sausage
3 tbs minced onion
3 tbs dried breadcrumbs
1 egg
Shape sausage mixture into meatballs, each surrounding one stuffed olive
Roll meatballs in additional dry breadcrumbs, fry until lightly browned and cook through. Or drizzle with olive oil and bake at 350 degrees until cooked through.
Excellent with pasta and marinara sauce!
Makes 9 meatballs about 1-1/2 inch each.

* You could also use Deep Garlic Pitted Olives, Italian Style Pitted Olives, Lemon Citrus Pitted Olives, Sicilian Spiced Pitted Olives, or Estate Grown California Kalamon Pitted Olives which are all Sevillano olives.
